Mini Quiches

Quick Easy & Delicious

  • 2 sheets rolled puff pastry (thawed)
  • 1-2 rashers bacon, finely chopped
  • 1/2 cup grated cheese
  • About 1/4 cup chopped parsley or chives (optional)
  • 2 eggs
  • 1/2 cup milk
  • Seasoning to taste

  1. Using a 6.5 cm scone cutter, (or some other suitable cutting device) cut 24 rounds of pastry and use to line 24 muffin/patty tray.
  2. Divide onion, bacon and cheese between the patty tins.
  3. Combine eggs, milk, parsley or chives and seasoning. Beat well with a fork.
  4. Pour the egg mixture carefully in the pastry cases.
  5. Bake in a hot oven 15-20 minutes or until golden and puffed.
  6. Serve warm.
